Skokie Country Club | Glencoe, IL
In 2014, our team designed, consulted on, and now oversees Skokie Country Club’s edible gardens.The club’s main “potager” garden reflects a French style of densely-planted symmetrical kitchen gardening. The larger raised bed production gardens grow the majority of the vegetables, fruit, and herbs that are harvested and served as a garden-to-table addition to the club’s menu. Working closely with SCC’s chef, we’ve chosen unique, flavorful varieties.
The open, collaborative nature of SCC’s team has allowed us to create an innovative program together. Independently, the club’s superintendent has integrated honeybees, egg-laying hens, and an overall sustainable approach to the entire grounds. Learn more about the project in Crain’s Chicago.
